Master Butcher Dario Cecchini
Dario Cecchini is an artisanal butcher, carrying out his work for 38 years in the village of Panzano-in-Chianti. The descendant of 8 generations of butchers, Dario seeks to better himself in the art of butchery, and to discover the best cutting and cooking methods for each piece of meat. His goal is to respect the animal by using every part in the best way possible.
Drawing on his heritage, Dario’s philosophy is one of “no waste”, and he applies this idea in his butchery and his restaurants; Solociccia and the Officina della Bistecca. Dario says, “A butcher represents the most delicate link of the food chain. He kills to make food, then must take responsibility to show and teach respect for the animal that his given its life to sustain us. No cut is better than the other – the cow is not made up of only the fillet and steak. Every piece can be great, from head to tail, if cooked properly.”
