Albert Tse, chef of Conrad Tokyo’s avant-garde Chinese restaurant, China Blue, brings with him a history of culinary experiences and prestige. The one-Michelin-starred restaurant awarded by the Michelin Guide Tokyo and Chef Tse was also awarded the Escoffier award with the title of “Culinary Art Master” in 2006. Having started his career in 1979 with Hong Kong’s Gay Villa Restaurant, he has since accumulated expertise in Hong Kong’s most esteemed establishments and mastered a variety of cooking styles and presentations.
