Masterchef Pedro Miguel Schiaffino had his first contact with food when he was a teenager under the influence of his grandmother. This led him to study at the Culinary Institute Of America and travel to Italy where he spent over four years cooking and studying with the top chefs. He was initially working at Locande Dell'Angelo in Ameglia, then at Pinocchio restaurant in Brogomeno, a Bertonotti family restaurant. Returning to Peru, he opened Malabar with the idea of offering a new cuisine using jungle ingredients, which are underutilised in Lima.
