Dedicated and driven, Freddy helms the Open Door Policy kitchen with over a decade’s worth of experience behind the stove. In 2016, after months of extensive research and planning, Freddy worked closely with Executive Chef Ryan Clift to give Tiong Bahru’s favourite gourmet spot, Open Door Policy, a delicious new gluten- and dairy-free spin.
Having trained in some of Singapore’s finest authentic Italian outfits the likes of Alkaff Mansion Ristorante and OChre Italian Restaurant, Freddy lends his Italian culinary expertise in creating gluten-free pasta and pastries that have since become signature staples on the menu.
