Originally from Singapore, Chef Maurice brings 25 years of Chinese culinary flair and experience to the tables of Cheong Fatt Tze Restaurant in THE BLUE MANSION, located in the UNESCO Heritage Site of George Town, Penang.
His training as a chef began long before he attended culinary school. His passion for food, Chinese food in particular, was already being harnessed in the kitchens of his childhoold, where cooking runs in his blood. With both parents and an uncle working as Chinese cuisine chefs, he practically grew up in the kitchen helping his parents prepare Chinese dishes. From a tender young age, he had mastered the complex and intricate arts of making fresh noodles and dim sum, perhaps one of the most refined skills to perfect in Chinese cooking.
After earning a Diploma in Culinary Skills from well-known SHATEC (Singapore Hotel and Tourism Education Center), Chef Maurice opened his culinary world to Western influences. He worked in various reputable free-standing restaurants and 5-star international as well as independent hotel chains in Singapore, Maldives and the Philippines.
He now finds himself in the World Heritage Site of George Town, Penang, famed as the culinary capital of the region and home of many discerning palates. He brings the refinement of Cantonese cuisine to Cheong Fatt Tze Restaurant and adds his own creativity and expertise to a name that is synonymous with Chinese roots.
