Appetiser of crisp Asian pears combined with a tangy sauce bouquet awakens your taste buds and prepares them for the wonderful flavours and aromas yet to come. Inspired by the delicate crostini appetizers of Italy but adapted to the light, delicate palates of Asia. This appetiser may be accompanied by a light Dragon Spring tea of east China’s west lake area near Hangzhou in Zhejiang or a clean crisp white wine or a full-bodied red wine.
Method:
Mix all green tea sauce ingredients in a blender for a short time ensuring that the ingredients are chunky. Roast walnuts separately until crisp and slightly charred.
Assembly:
Place pear slices on a bed
of bitter lettuce. Spoon green tea honey sauce on pear slices. Crumble walnuts
(by hand) and feta over the sauce. Sprinkle with fresh chrysanthemum petals.
Garnish with green tea powder.
