Lobster Roll with Potato Foam and Osetra Caviar

Ingredients:  
   
  Pickling Solution
˝ cup vinegar
1 cup sugar
1 ˝ cup water
1 Asian pear, thinly sliced
   
  Lobster Roll
1 cup 1-2-3 vinegar
2 lobsters, cooked, shelled & chopped
2 limes for juice
2 tomatoes, peeled, seeded & diced
2 tsp miso
2 sprigs cilantro
1 tbsp mayonnaise
 
 
  Potato Foam
1 cup fingerling potatoes
2 cups chicken stock
˝ cup cream
1 shallot
1 clove garlic
2 tbsp olive oil
  nutmeg, salt & pepper, to taste
 
 
  Garnish
  pickled cucumber
  pickled dikon
  Osetra caviar
  kichap manis
 
 

Method:

Pickling Solution
Bring ingredients to a boil then pour the liquid over pears. 

In a bowl, toss tomatoes, lobster meat and limejuice.  Add in miso, mayonnaise and cilantro.


Lobster Roll

Lay pear slices on a piece of plastic wrap, which is 2” by 6.  Add 2 tablespoons of lobster mixture, and roll it up as tight as possible.

Potato Foam
In a pan sauté the garlic and shallot.  Add the olive oil, potatoes and chicken stock.  Cook until potatoes are soft.  Then, add the cream and puree.  Season with nutmeg, salt and pepper.  Allow to cool, and place into a foam machine.
